Using an immersion blender

This handheld tool makes easy work of pureeing soups, sauces, dips and smoothies. It has a long, narrow stem with rotary blades at the end so you can immerse it right into the pot, bowl or glass. When choosing an immersion blender, pick one with a powerful motor as it will be the most versatile.

Weight matters too, so hold the blender in your hand and make sure that it is lightweight enough to hold comfortably. Check to see that the on/off and speed controls are easy to use. The stem is another consideration. A removable metal stem will last longer than a plastic stem and makes cleaning much easier because you can transfer the dirty part to the sink or dishwasher without the electrical components.

Cordless models also offer great convenience. Finally, don't be overly impressed by attachments. Only buy them if you know that you will use them.

Cleaning a blender is easy. Just make sure that the blender is unplugged before washing. Wipe the stem with a damp cloth and wash the blade under hot running water. Or, if you have a removable stem, wash it under running water or in the dishwasher.
