Chicken and Winter Melon Soup Recipe


Ingredients : Serves 6

500g Chicken wings or half a chicken

1kg Chinese winter melon

6 Spring onions

5 cups Water

1 teaspoon Salt

1 tablespoon Fish sauce

Black pepper to taste

Method :
  • Cut chicken wings or half chicken into joints.

  • Peel melon, discard skin and spongy center with seeds.

  • Cut melon into bite-sized pieces.

  • Slice spring onions.

  • Put chicken into saucepan with spring onions, water and salt.

  • Bring to the boil, then cover and simmer for 1 hour or until liquid is reduced and well flavored.

  • Add winter melon, bring to the boil for one minute only.

  • Add fish sauce and pepper to taste.

  • Serve immediately, with rice if desired.

Note : Peeled, sliced and seeded cucumber can be used as a substitute for winter melon if it is not available.
