Spiced Eggplant with Yoghurt Recipe

(Baigan Pachchadi)


Ingredients :

Black mustard seeds

Medium onion, finely chopped

Fresh green chilies, seeded and sliced

Medium eggplant, peeled and diced

Small ripe tomato, diced

Salt

Garam masala

Chili powder, optional

Water

Yoghurt

Chopped fresh coriander leaves

Method :
  • In a saucepan, heat oil and fry mustard seeds until they pop.

  • Add onion and chilies and fry until onion is soft.

  • Add eggplant and fry for a few minutes, stirring.

  • Then add tomato, salt, garam masala and chili powder.

  • Stir well, add water, cover and cook until eggplant and tomato can be mashed to a puree.

  • Cool, stir in yoghurt and half the coriander leaves.

  • Serve garnished with remaining leaves.
