Fish and Chayote in Coconut Milk Recipe (Mangut Ikan Pe)

Ingredients :

Thin coconut milk

Chayote, cut into 2 cm cubes

Grilled small shark

String beans, cut into 3 cm pieces

Melinjo leaves

Green beans (petai)

Green chilies, sliced across

Red chilies, sliced across

Galangal, bruised

Salam leavevs or bay leaves as substitute

Thick coconut milk

Salt and sugar

Shallots

Garlic

Chopped lesser galangal

Shrimp paste (belacan)

Method :
  • Bring to the boil thin coconut milk with ground spices.
  • Add chayote and fish.
  • Allow to simmer until the chayote is soft.
  • Add all other ingredients except thick coconut milk, stir well and continue to cook.
  • When vegetables are nearly cooked, add thick coconut milk and keep stirring from time to time to prevent coconut milk from curdling.
  • Serve hot.
