Stir Fried Shrimps in Coconut Gravy Recipe (Tumis Udang)

Ingredients :

Medium-sized shrimps, discard head

Lime juice

Salt

Pepper

Oil

Lemon grass, bruised

Pandanus leaf

Cinnamon

Cardamom

Coconut milk

Curry leaves

Clove

Green chilies

Carambolas, sliced across 1/2 cm thick

Red chilies

Coriander

Peppercorns, roasted

Cumin

Dried carambola

Garlic

Shallots

Chopped ginger

Chopped turmeric

Method :
  • Rub the shrimps with lime juice, salt and pepper, and allow to stand for 10 minutes.
  • Heat oil and sauté ground spices, lemon grass, pandanus leaf, cinnamon and cardamom.
  • Add shrimps,. coconut milk and other ingredients.
  • Simmer over low heat until the gravy thickens.
  • Serve hot.
