Pork and Lotus Root Soup Recipe


Ingredients : Serves 4

500g Lean pork ribs

500g Fresh lotus root

3 Spring onions

1/2 teaspoon Salt

6 cups Water

1-2 tablespoons Fish sauce

Method :
  • Ask the butcher to cut the pork ribs into short lengths.

  • Peel lotus root thinly and cut into slices.

  • Slice spring onions, using both green and white parts.

  • Put these ingredients into a saucepan with the salt and water.

  • Bring to the boil.

  • Then cover and simmer for 1 1/2 hours or until well cooked and the liquid reduced to 4 cups.

  • Add fish sauce to taste.

  • Serve with white rice.
