Stir-Fried Snow Beans with Chinese Mushrooms Recipe


Ingredients :

6-8 Dried Chinese mushrooms

225 g Snow peas

3 tablespoons Oil

1 teaspoon Salt

1 teaspoon Sugar

Method :

Soak the dried mushrooms in warm water for 30 minutes. Squeeze dry and discard the hard stalks. Keep the water. Cut each mushroom into small pieces. Wash and trim the snow peas. If large, they should be snapped in half. Smaller ones can be left whole. Heat the oil in a very hot wok or large frying-pan until smoking. Cook the peas by stir-frying for a few seconds. Then add the mushrooms, the salt and sugar and continue stirring for about 30 seconds. Add a little of the water in which the mushrooms were soaked. Serve as soon as the liquid starts to boil.
