Courgette Fritters Recipe |

Ingredients : Serves 4 |
100 g/4 oz/1 cup self-raising (self-rising) flour 225 g/8 oz courgettes (zucchini), grated 15 ml/1 tbsp dried oregano |
Method : Whisk the flour, eggs and milk to a thick batter and season with salt and pepper. Mix in the courgettes and oregano. Heat the oil in a large frying pan (skillet) and fry (saute) spoonfuls of the mixture for a few minutes each side until golden brown. Remove from the pan and keep warm while you fry the remaining fritters. Serve immediately. |
