Chicken Innards in Banana Leaf Recipe (Botok Jerohan)

Chicken gizzards

Chicken hearts

Chicken livers

Chicken intestines, cleaned, cut into 5 cm pieces

Lemon grass, bruised, cut into 7cm pieces

Salam leaves or bay leaves as substitute

Bird's eye chilies

Red chilies, slit lengthwise

Carambolas, sliced

Coconut milk from 1/2 coconut

Banana leaves for wrapping

Shallots

Garlic

Galangal

Lesser galangal

Candlenuts, roasted

Dried shrimp paste

Salt

Brown sugar

Method :
  • Mix ground spices with innards.
  • Take 2 banana leaves and put 1 piece lemon grass, 1 salam leaf, 1/8 of the innards mixture, bird's eye chilies, red chilies, carambola slices and 1/8 of the coconut milk.
  • Wrap banana leaf in the shape of a pyramid.
  • Steam for 45 minutes until cooked.
  • Remove from heat and serve.
