Duck in Green Chili Sauce Recipe (Gulai Itik Hijau)

Lemon grass, bruised

Kaffir lime leaves

Young duck, cut into 8 pieces

Water

Dried sour fruit (Garcinia cambogia)

Green chilies

Shallots

Chopped ginger

Chopped turmeric

Chopped galangal

Peppercorns

Candlenuts, roasted

Salt

Method :
  • Heat the oil and sauté ground spices, lemon grass and kaffir lime leaves until fragrant, then add duck.
  • Add enough water to cover the duck, then add dried sour fruit.
  • Simmer for 2-3 hours until the duck is tender, the spices are absorbed and the gravy has thickened.
  • Season to taste and serve hot.
