Nut Roast Recipe


Ingredients : Serves 4

50 g/2 oz/0.25 cup butter or margarine

3 onions
350 g/12 oz/3 cups chopped mixed nuts

225 g/8 oz/4 cups fresh breadcrumbs

600 ml/1 pt/2.5 cups Vegetable Stock
10 ml/2 tsp yeast extract
10 ml/2 tsp dried mixed herbs
Salt and freshly ground black pepper

1 tomato, sliced

Method :

Melt the butter or margarine. Chop two of the onions and fry (saute) until soft but not brown. Remove from the heat and stir in the nuts, most of the breadcrumbs, the stock, yeast extract and herbs and season to taste with salt and pepper. Press the mixture into a greased shallow baking dish, sprinkle with the reserved breadcrumbs and bake in a preheated oven at 180°C/350°F/gas mark 4 for 50 minutes until golden brown. Slice the remaining onion into rings and serve the loaf garnished with onion rings and tomato slices.
