Mixed Curried Beans Recipe


Ingredients : Serves 4

100 g/4 oz/0.5 cup butter or margarine

2 onions, chopped
2 garlic cloves, crushed
15 ml/1 tbsp ground coriander (cilantro)

5 ml/1 tsp garam masala
5 ml/1 tsp chili powder
400 g/14 oz/1 large can of tomatoes, chopped
5 ml/1 tsp sugar
300 g/11 oz/1 medium can of red kidney beans, drained
300 g/11 oz/1 medium can of borlotti beans, drained
300 g/11 oz/1 medium can of haricot (navy) beans, drained
Salt and freshly ground black pepper

Method :

Melt the butter or margarine and fry (saute) the onions until just browned. Add the garlic and fry for 1 minute, then add the coriander, garam masala and chili powder and fry for a few seconds. Stir in the tomatoes and sugar and simmer for 10 minutes. Stir in the beans, season to taste and heat through thoroughly before serving.
