Spinach and Cheese Quenelles Recipe |

Ingredients : Serves 4 |
225 g/8 oz spinach, stalks removed and chopped 1 egg, beaten 1 garlic clove, crushed A pinch of grated nutmeg |
Method : Mix together all the ingredients except the flour and Tomato Sauce, seasoning to taste. Roll into 2.5 cm/1 in balls, roll lightly in the flour and chill. Bring a saucepan of salted water to the boil, then drop in the spinach balls and simmer until they rise to the surface. Remove with a slotted spoon and serve with Tomato Sauce. |
