Spinach and Cheese Quenelles Recipe


Ingredients : Serves 4

225 g/8 oz spinach, stalks removed and chopped
225 g/8 oz/1 cup full-fat soft cheese
75 g/3 oz/1.5 cups fresh breadcrumbs
15 g/0.5 oz wheatgerm

1 egg, beaten
1 small onion, chopped

1 garlic clove, crushed
25 g/1 oz/0.25 cup Parmesan cheese, freshly grated
2.5 ml/0.5 tsp chopped basil

A pinch of grated nutmeg
Salt and freshly ground black pepper
50 g/2 oz/0.5 cup wholemeal flour
Tomato Sauce

Method :

Mix together all the ingredients except the flour and Tomato Sauce, seasoning to taste. Roll into 2.5 cm/1 in balls, roll lightly in the flour and chill. Bring a saucepan of salted water to the boil, then drop in the spinach balls and simmer until they rise to the surface. Remove with a slotted spoon and serve with Tomato Sauce.
