Potato Fritters Recipe |

Ingredients : Serves 4 |
450 g/1 lb potatoes 1 egg, beaten 60 ml/4 tbsp oil 1 onion, chopped 250 ml/8 fl oz/1 cup dry white wine 250 ml/8 fl oz/1 cup Vegetable Stock |
Method : Cook the potatoes in boiling salted water until tender, then drain and mash. Stir in the flour, egg and nutmeg and season to taste with salt and pepper, then roll into thick fritters. Heat the oil and fry (saute) the fritters until golden brown on both sides. Meanwhile, melt the butter or margarine and fry the onion until soft but not brown. Add the cabbage and fry for 2 minutes, then pour in the wine, stock, cider vinegar, caraway seeds and sugar. Bring to the boil, then simmer for 30 minutes. Sprinkle the cabbage with the chives and serve with the hot fritters. |
