Red Onion and Cheese Tarts Recipe |

Ingredients : Serves 4 |
250 g/9 oz Puff Pastry 30 ml/2 tbsp olive oil 150 ml/0.25 pt passata (sieved tomatoes) 175 g/6 oz/1.5 cups Mozzarella cheese, shredded |
Method : Roll out the pastry (paste) and cut it into 15 cm/6 in squares. Place on a dampened baking (cookie) sheet and fold up the sides to contain the filling. Heat the oil and fry (saute) the onions, orange pepper, garlic and tomatoes until just beginning to soften. Remove from the heat, stir in the passata and season to taste with salt and pepper. Divide the mixture between the pastry squares, then sprinkle with the Mozzarella and add a few rosemary leaves to each square. Bake in a preheated oven at 200°C/400°F/gas mark 6 for about 15 minutes until cooked through and golden. |
