Stir-Fried Green Cabbage Recipe


Ingredients :

500 g Green Cabbage

3 tablespoons Oil

1 1/2 teaspoon Salt

1 teaspoon Sugar

Method :

Choose a small, fresh cabbage and discard any outer tough leaves. Wash it under the cold water tap before cutting it into small pieces. In order to preserve its vitamin content, cook it as soon as you have cut it to limit exposure to the air. Heat the oil in a hot wok until smoking, swirling it to cover most of the surface. Add the cabbage and stir-fry for about 1 minute. Add the salt and sugar and continue stirring for a further minute or so. Do not overcook because the cabbage will lose its crispness and its bright color. No water is necessary since the high heat will bring out the natural juice from the cabbage, particularly if it is fresh. This dish can be served hot or cold.
