350 g French beans 1 Dried red chili 1 cup Peanut oil 1 tablespoon Garlic, chopped 1 teaspoon Fresh ginger, chopped 1 tablespoon Dried shrimp, chopped 2 teaspoons Dark soy sauce 1/4 cup Water 1/2 teaspoon Sesame oil 1 teaspoon Vinegar
Seasonings 2 teaspoons Rice wine 1/2 teaspoon Salt 1 teaspoon Sugar |
Method : Trim the beans and cut each one in half. Chop the chili into small pieces. Heat the pan until it is very hot. Add the peanut oil. Fry the French beans and remove after 30 seconds. Drain the oil away. Heat 1 tablespoon oil in pan, add the chopped garlic, ginger and dried shrimp and stir-fry until fragrant (about 30 seconds). Add the seasonings and French beans to the pan and sauté for a further 30 seconds. Add soy sauce and water and simmer over low heat until the sauce has almost evaporated. Add the sesame oil and vinegar and sauté for a short while longer over high heat. Serve. |
