Braised Spinach with Pork Recipe

Ingredients : Serves 4

2 bunches fresh spinach

250 g pork fillet

3 cloves garlic, chopped finely

2 tablespoons cooking oil

2 tablespoon light soy sauce

1/4 teaspoon ground black pepper

5 scallions, chopped finely

1 egg, beaten

3 tablespoons sesame seeds, toasted and crushed

Method :

Wash the spinach and remove the tough stems. Break the spinace into large bite-site pieces. Set aside. Dice the pork very small. Heat up a wok with the oil and fry the pork and chopped garlic until the pork changes color. Stir frequently. Add the spinach and toss well. Add the pepper and soy sauce to season. Cover with a lid and simmer on low heat until the spinach is tender. Add the scallions and egg. Stir well over moderate heat for about 2-3 minutes. Then sprinkle the toasted sesame seeds and serve immediately with steamed rice.
