Aromatic Crispy Duck Recipe

Ingredients :

2 kg

Cooking Sauce

6 cups

6 tablespoons

6 slices

10 tablespoons

4 tablespoons

6 tablespoons

6 pieces

1/2 teaspoon

1/4 teaspoon

Duck

Vegetable oil for deep-frying

Good stock

Sugar

Fresh root ginger

Soy sauce

Yellow bean paste

Rice wine or dry sherry

Star anise

Five-spice powder

Pepper

Method :
  • Mix the ingredients for the cooking sauce together in a large saucepan.

  • Clean the duck thoroughly and cut in half down the backbone.

  • Place into the liquid and submerge.

  • Simmer the duck gently for 2 hours.

  • Remove from the cooking liquid and leave to cool.

  • When required, heat the oil in a wok or deep-fryer.

  • When hot, place the duck gently in the oil and fry for 10-11 minutes.

  • Drain well and serve.
