Cantonese Stir Fried Beef in Oyster Sauce Recipe

Ingredients :

450 g

Beef steak

Salt

Cornflour

Egg white

Fresh root ginger

Snow peas

Spring onions (scallions)

Vegetable oil

Lard

Good stock

Soy sauce

Oyster sauce

Rice wine or dry sherry

Pepper to taste

Method :
  • Cut the beef into thin strips and mix with the salt and pepper.

  • Toss in the cornflour and coat in the egg white.

  • Shred the ginger.

  • Cut each snow peas slantwise in half and cut the onions slantwise in 4cm sections.

  • Heat the oil in a wok or frying pan.

  • When hot, stir-fry the ginger in the oil to flavor.

  • Add the beef and stir-fry over high heat for about 1 minute.

  • Remove and set aside.

  • Add the lard to the pan.

  • When hot, stir-fry the snow peas and spring onions for 1-2 minutes.

  • Add the stock and soy sauce, and continue to stir-fry for 30 seconds.

  • Return the beef to the pan, add the oyster sauce and wine or sherry and stir-fry over high heat for 30 seconds.

  • Serve.
