Pork in Hot and Sour Sauce Recipe

Ingredients :

Pork fillet

Chinese dried mushrooms, soaked

Chinese pickled cabbage

Bamboo shoots

Green hot chilies

Leek

Egg

Cornflour

Salt

Chili puree (paste)

Soy sauce

Sesame seed oil

Oil for deep-frying

Method :
  • First cut the pork into thick slices

  • Score the surface with a criss-cross pattern, then cut them into small squares.

  • Marinate with salt, egg and 1 tablespoon cornflour.

  • Finely chop the mushrooms, pickled cabbage, bamboo shoots, green chilies and leek.

  • Warm up the oil, deep-fry the pork until each piece opens up like a flower, scoop out and drain.

  • Pour off the excess oil leaving about 2 tablespoons in the wok.

  • Stir-fry all the chopped ingredients, add puree and pork, blend well.

  • Now add soy sauce and the remaining cornflour mixed with a little cold water.

  • When the sauce thickens, add the sesame seed oil.

  • Serve.
