Steamed Fish with Ham Recipe

Ingredients :

750 g

1/6 cup

1/6 cup

2 large

1/8 cup

1 1/2 teaspoon

1 teaspoon

Carp, perch or Bream

Cooked ham

Bamboo shoots

Chinese dried mushrooms, soaked

Pork fat

Salt

Sugar

Chinese wine or sherry

Spring onions (scallions)

Ginger root

Lard

Method :
  • Scale and gut the fish, clean and dry well.

  • Trim off fins and tail.

  • Score the body three or four times half way down.

  • Then place it on an oblong dish.

  • Cut the ham, bamboo shoots, mushrooms and pork fat into match-sized shred.

  • Arrange them in four different rows according to color in a star shape.

  • Spread the salt, sugar, wine, lard, onions and ginger root evenly on top of the fish.

  • Steam vigorously for 20 minutes.

  • Discard the onions and ginger root before serving.
