Braised Shrimps in Shells Recipe

Ingredients :

450 g

2 tablespoons

2 tablespoons

1 teaspoon

1/2 tablespoon

4 tablespoons

150 g

Large shrimps in their shells

Soy sauce

Rice wine or dry sherry

Salt

Sugar

Stock

Lard

Method :
  • Trim off the legs and heads of the shrimps but keep the shells and tails on.

  • Heat up the lard, fry the shrimps for about 5 minutes or until golden.

  • Using a slotted spoon, remove the shrimps from the wok and then drain off the excess lard from the wok.

  • Return the shrimps, add rice wine or sherry, soy sauce, stock, sugar and salt.

  • Cook until all the juice is absorbed,

  • Serve either hot or cold.
