Grilled Catfish Stuffed with Chili Recipe (Panggang Haruan)

Ingredients :

Fresh catfish

Shallots, ground

Minced turmeric, ground

Salt

Margarine, melted

Oil

Red chilies

Shallots

Garlic

Shrimp paste (Belacan)

Tomatoes, chopped

Method :
  • Clean fish and remove scales, gills, entrails, fins and head.
  • Make a slit along the underside of the fish right down to the tail, without cutting the tail off.
  • Rub fish with shallots, turmeric and salt.
  • Stuff the fish with some of the ground spices,
  • Grill it over hot charcoal or bake in an oven, at intervals brushing with melted margarine until cooked.
  • Heat oil and sauté remaining ground spices until fragrant, then pour over the fish.
  • Serve hot.
