Lamb in Thick Fried Coconut Sauce Recipe (Kagape Kambing)

Ingredients :

500 g

Lamb, cut into 2 X 2 X 3 cm pieces

Tamarind

Salt

Oil

Lemon grass, bruised

Coconut milk from 1/2 coconut

Coconut (200 grams), shredded, roasted and pounded

Coriander

Peppercorns, roasted

Cumin

Candlenuts

Turmeric

Chopped ginger

Chopped galangal

Garlic

Shallots

Salt to taste

Method :
  • Combine and knead meat with tamarind and salt.
  • Let it stand for 15 minutes.
  • Heat oil and sauté ground spices and lemon grass until fragrant.
  • Add meat and pour in coconut milk.
  • Simmer until the meat is half-cooked, then add pounded coconut.
  • Cook until the meat is tender and the gravy has thickened.
  • Serve hot.
