Grilled Minced Lamb Recipe (Mahbub)

Ingredients :

300 g

200 g

200 g

Spices (ground)

1 tablespoon

1/4 teaspoon

1 teaspoon

1/4 teaspoon

1/4 teaspoon

2 tablespoons

1 tablespoon

Lamb, minced

Lamb liver, minced

Lamb fat fresh or dried, cut into 6 X 6 cm pieces

Skewers and banana leaves

Coriander

Cumin, roasted

Peppercorns

Powdered nutmeg

Powdered cloves

Fried shallots

Tamarind juice

Salt and sugar to taste

Method :
  • Combine meat and liver with ground spices.
  • Knead to mix thoroughly.
  • Divide mixture into 16-17 parts.
  • Shape meat into balls and wrap with fat.
  • Thread meatballs onto skewers and wrap with banana leaves.
  • Grill over hot charcoal until tender.
  • Unwrap before serving.
