Lamb Soup Recipe (Sop Kambing)

Ingredients :

2 1/2 liters

Lamb, chopped into small pieces

Water

Ginger, bruised

Nutmeg, bruised

Margarine

Spring onion, chopped into 2 cm pieces

Carrots, cut into big pieces

Pepper

Tomatoes, quartered

Cabbage, cut into 3cm pieces

Chinese parsley, chopped

Lime, extract juice

Fried shallots

Salt to taste

Melinjo nut crackers

Method :
  • Boil meat with ginger, nutmeg and salt until the meat is tender.
  • Reserve 1 1/2 liters stock.
  • Heat margarine and sauté spring onions until soft, then add carrots.
  • Pour in the stock and bring to the boil.
  • Add pepper, tomato, cabbage and Chinese parsley.
  • Simmer until cooked and season to taste.
  • Sprinkle with lime juice and garnish with fried shallots and melinjo nut crackers.
