Grilled Chicken in Banana Leaf Recipe (Pais Ayam)

Ingredients :

Spices (ground)

1/2 teaspoon

Chicken, cut into 8 pieces

Tamarind

Oil

Salam leaves or bay leaves as substitute

Lemon grass, halved, bruised

Coconut milk from 1 coconut

Salt

Banana leaves, for wrapping

Candlenuts, roasted or fried

Chopped galangal

Chopped turmeric

Shallots

Garlic

Coriander

Powdered cumin

Pepper

Salt and sugar

Method :
  • Rub chicken with tamarind and salt. Set aside.
  • Heat oil and sauté ground spices, salam leaves and lemon grass until fragrant.
  • Add the chicken and fry for a few minutes.
  • Pour in coconut milk, stirring from time to time until the chicken is half-cooked.
  • Take 1-2 pieces banana leaf and add 1 salam leaf and 1 stalk lemon grass.
  • Place 3-4 pieces chicken.
  • Roll up and secure both ends with toothpicks.
  • Repeat for the rest of the chicken.
  • Grill chicken until it is cooked and dry.
  • Serve hot.
