Whitebait and Herbs Grilled in Banana Leaf Recipe (Palai Bada)

Fresh whitebait, discard the head

Coconut, shredded, finely pounded

Cup leaves, thinly sliced

Turmeric leaf, thinly sliced

Sliced basil leaves

Banana Leaves

Red chilies

Shallots

Chopped ginger

Chopped turmeric

Sliced lemon grass

Lime, extract the pulp

Method :
  • Rinse the fish, then drain.
  • Combine shredded coconut, ground spices, whitebait, sliced cup leaves, turmeric and basil leaves, and mix well.
  • Put 1-2 tablespoons fish mixture on 1 banana leaf, roll up and secure both ends with toothpicks.
  • Repeat this process with the remaining mixture.
  • Grill over hot charcoal until cooked.
  • Serve hot.
