Method :
Potato Croquettes : Mash 350 grams boiled potatoes, and add 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/8 teaspoon grated nutmeg, and 1 egg yolk. Shape into 4-5 balls. Dip the potato balls in beaten egg white and fry until golden brown. How to serve : Arrange glass noodles, sliced potatoes croquettes and fried beef in a bowl. Pour the hot stock over and garnish with fried shallots, shrimp / prawn crackers, spring onions and Chinese parsley. Serve with spicy sauce and sweet soy sauce. |
