Spicy Beef Soup Recipe (Soto Padang)

Ingredients :

Beef, fat and sinew removed

Kaffir lime leaves

Lemon grass, bruised

Nutmeg, bruised

Cloves

Spring onions, finely sliced

Vinegar

Glass noodles, cut into 10 cm lengths,

soaked until tender, drained.

Potatoes Croquettes

Fried shallots

Shrimp / Prawn crackers

Spring onions, sliced

Chinese parsley, chopped

Sweet soy sauce

Shallots

Garlic

Chopped ginger

Chopped turmeric

Peppercorns

Salt to taste

Bird's eye chilies, steamed

Red onions, steamed

Method :
  • Boil beef until tender.
  • Remove from the stock and slice thinly.
  • Tenderize meat by pounding with the back of a knife.
  • Rub with a little salt and deep-fry until dry.
  • Shred the meat finely.
  • Simmer 1 1/4 liters stock, if there is not enough stock, add more water.
  • Heat oil and gently fry ground spices, kaffir lime leaves, lemon grass, nutmeg and cloves until fragrant.
  • Add these to the stock.
  • Then add sliced spring onions and vinegar.

Potato Croquettes :

Mash 350 grams boiled potatoes, and add 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/8 teaspoon grated nutmeg, and 1 egg yolk. Shape into 4-5 balls. Dip the potato balls in beaten egg white and fry until golden brown.

How to serve :

Arrange glass noodles, sliced potatoes croquettes and fried beef in a bowl. Pour the hot stock over and garnish with fried shallots, shrimp / prawn crackers, spring onions and Chinese parsley. Serve with spicy sauce and sweet soy sauce.
