Lamb Stomach in Sweet Sour Sauce Recipe (Perut Cuka)

Ingredients :

1 kg

5 stalks

5 tablespoons

35 cc

1-2 tablespoons

Spices (ground)

50 g

5 cloves

10

2 teaspoons

1 teaspoon

1 tablespoon

Lamb tripe / intestines

Lemon grass, bruised

Oil

Water

Vinegar or 3-4 tablespoons lime juice

Salt and sugar to taste

Bird's eye chilies

Garlic

Shallots

Turmeric

Chopped ginger

Chopped galangal

Method :
  • Clean intestines and tripe, and bring to the boil with 2 stalks lemon grass until tender.
  • Cut into 4 cm pieces.
  • Heat oil and sauté ground spices and remaining lemon grass until fragrant.
  • Add intestines and tripe and stir well.
  • Add water, vinegar, salt and sugar.
  • Simmer over low heat until the spices are absorbed and the sauce has thickened.
