Chicken Stewed in Coconut Milk Recipe (Kalio Ayam)

Ingredients :

750 cc

Spices (ground)

Coconut milk from 1 coconut

Turmeric leaf, shredded, tied

Lemon grass, bruised

Kaffir lime leaves

Asam gelugur or 1/2 tablespoon tamarind juice

Chicken, cut into 8 pieces

Red chilies

Chopped galangal

Chopped turmeric

Chopped ginger

Shallots

Powdered coriander

Salt

Method :
  • Simmer coconut milk with ground spices, turmeric leaf, lemon grass, kaffir lime leaves and asam gelugur or tamarind juice.
  • Keep stirring until the milk becomes oily.
  • Add chicken and simmer until it is cooked and the gravy has thickened.
  • Serve hot.
