Cockles in Spiced Shredded Coconut Recipe (Sambal Kerang)

Ingredients :

Fresh cockles

Turmeric leaf, torn and knotted

Kaffir lime leaves

Asam gelugur

Coconut milk from 1 coconut

Coconut, shredded

Red chilies

Garlic

Shallots

Thinly sliced lemon grass

Chopped ginger

Chopped turmeric

Chopped galangal

Coriander, roasted

Cumin, roasted

Salt

Method :
  • Put the cockles in a pan and add ground spices, turmeric and kaffir lime leaves, asam gelugur and coconut milk.
  • Cook until the cockles are soft and the gravy has thickened.
  • Add shredded coconut and continue cooking until the coconut is dry and golden brown.
  • Serve.
